GARNISH ======================== 4 tsp sweet butter, margarine (melted) or oil

Sprinkle the yeast on to 1/4 cup lukewarm water. Stir to dissolve and leave to stand in a warm position for 10 minutes or until the yeast has become activated and doubled in volume.

Meanwhile, create the filling. Chop or grind the suet; pound the parsley, onion and spices in a mortar or chop finely to a paste. Mix with the suet then set aside.

Mix the flour with the salt and create a well in the center. Pour in the bubbling yeast and enough lukewarm water to form a ball of dough. (Add more water if the dough seems difficult to mould). Knead well until smooth and elastic or for around 20 minutes. Split the ball of dough into 4 equal parts.

Lightly flour a board. Begin patting the first ball of dough down to a disc form, stretching and flattening it to create a rectangle roughly 8 x 14 inches. Spread one-quarter of the filling in the center. Fold the right and then the left side of the dough over the filling.

Press down on this ‘package’ and start flattening and stretching it (with the filling inside) until it is the same size (8 x 14 inches) as before. Repeat the folding, this time right side over the center and left side under. Repeat with the other 3 balls of dough. Set aside, covered, in a warm place for 45 minutes.

Heat a griddle. Prick the ‘packages’ with a fork six or seven times on both sides. Put on the griddle – they will start to fry in the fat released from their fillings. Fry the ‘packages’ 10 minutes on each side, until crisp. Dot each pizza with a teaspoonful of sweetened melted butter or oil before serving.

You can eat these Moroccan pizzas from Marrakesh with anything, but there is already a fat content, so it would be better to have them with a salad or even fruit. Unless you are a fan of racing cars, there is a decent chance that you have not heard of Formula D Racing. Formula D has its adherents of course, but it is still not as widely known as the other types of racing like Formula One, Drag Car Racing, NASCAR or Cross Country Rallying. This is partly because it is a fairly new kind of car racing.

Every year the national television coverage is a bit more extensive, yet it is taking a long time to prise some of the airtime away from the more traditional sports. The ‘D’ in Formula D stands for ‘drifting’ which is another name given to the sport. Drifting refers to the angle of the car with reference to the sides of the road at any given moment. Generously pack each mushroom cap with ricotta mixture and place in the baking dish or roasting pan ricotta side up. Top each cap with a handful of the grated mozarella. Then top each cap with a generous amount of the soya meat/onion mixture. Top each cap with another handful of mozarella.

Pour spaghetti sauce over each cap and around the bottom of the pan. Top with the remaining mozarella cheese.

Bake at 350 for 30-35 minutes. Allow to cool for around 10

Baked Tomatoes With Proven?ale Stuffing

4 Servings

4 md tomatoes – unpeeled, cored, pulp removed 1 T olive oil 3/4 c onions, chopped 2 cloves garlic, ground 1/2 T fresh parsley, chopped 2 t fresh basil, chopped 1 1/2 t fresh thyme, chopped 1/2 t salt 1/4 t black pepper 3/4 c bread crumbs 1/4 c plus 2 tablespoons Parmesan cheese

Bring the oven to 375F. Core tomatoes and scoop the insides out to leave whole skins.

Heat skillet with oil to medium heat and saute onion with garlic for around 3 minutes. Stir in tomato cores, herbs and seasonings. Saute for around 4 minutes or until the liquid evaporates.

Remove from heat and stir in breadcrumbs and a cup measure of the Parmesan cheese. Reserve the rest of the cheese for later.

Stuff the tomatoes with the mixture and sprinkle evenly with the remaining measure of Parmesan cheese.

Bake for around 15 minutes.

Franconia Root Vegetables

6 Servings

6 lb potatoes, peeled 1 1/2 lb small carrots, trimmed and scraped (or large carrots, cut carefully in ovals) 1 lb small turnips, peeled, sprout end (or large turnips, trimmed 12 small white onions a little margarine 1 t dried thyme leaves, crumbled Salt and freshly ground pepper to taste 1/4 c parsley, chopped 1 large marrow, cored

Drop potatoes into a saucepan of cold, salted water. Over high heat, bring water to a boil, lower heat to medium |and cook potatoes for 12 minutes. Drain, let cool for a few minutes, pat dry, and cut into quarters (or halve horizontally and trim each half into ovals).

Meanwhile, drop carrots, turnips, and onions into boiling salted water to cover. Lower heat to medium, cover, and boil until barely tender (10 to 15 minutes, depending on size). Drain, immediately cool under running water, and set vegetables aside.

About one hour before marrow will be served, place potato quarters in margarine (at least 1/2 cup) and turn them to coat. (If you are allowed you can use a little unsalted butter).

Position in oven (wherever there’s room, including the bottom shelf) but roast for 45 minutes, turning every 10 minutes or so to brown all sides uniformly. Add carrots, turnips, and onions. Sprinkle with thyme, salt, and pepper.

Keep roasting and turning frequently until vegetables are tender and evenly browned (around 15 minutes or slightly longer). Using tongs (or a slotted spoon) and draining off excess fat, remove to serving dish and sprinkle with parsley.

Painting, staining or oiling is far easier if you carry it out before you hang the shutters. If you want to use oil to protect your new wooden shutters, first stain them to the colour that you want them to be with a stain without varnish. When you have accomplished the desired shade and it has dried, pour oil linseed oil onto a cloth and rub it into the wood in circular motions. The more coats you give it the better, but it may not accept more that two or three coats.

If you want to varnish your shutters, either stain them to the colour you require as above and then seal them with clear yacht varnish or use a stained yacht varnish without the stain. Whichever way you go, thin the first coat of varnish down until it is almost watery. Paint it on and leave to dry. Rub it down with medium coarse sandpaper and then coat it again with neat varnish. Wait for it to dry and sand it down again, but with fine sandpaper. Add at least one more coat, but it is a matter of the more the better.

If you want to paint them, apply a primer or some thinned down undercoat. Wait for it to dry and sand it lightly with fine sandpaper. Next, apply a coat of undercoat that is suitable for the finishing colour. For example, grey is good for black, brown and even olive or burgundy. Sand it down when it is dry with fine paper. Lastly, gloss your shutters with the final colour.

In conclusion, hang the shutters on suitable hinges using brass screws. Next time, you paint or varnish your shutters paint over the screw heads, although brass never looks out of place anyway.

Today, each schoolboy knows the story of William Webb Ellis, the Rugby School pupil “who with a fine disregard for the rules of football as played in his time, first took the ball in his arms and ran with it”. The presentation trophy for the Rugby World Cup is named the Webb Ellis trophy in his honour, and his “achievement” is commemorated by a plaque at the school

There is only one problem with this story. It simply is not a fact. It was not until four years after the death of Webb Ellis in 1876 that the story first saw the light of day and its source is thought to come from a local antiquarian and previous Rugbeian Matthew Bloxam.

He was not a contemporary of Webb Ellis and says that the story was related to him by an unnamed source some 53 years after the incident is alleged to have happened.

In 1823, when the event is supposed to have occurred, the rules of rugby had yet to be written and any changes, such as the legality of carrying or running with the ball, were often agreed on an ad hoc basis a short time before the start of a game.

There were thus no formal rules for football during the period William Webb Ellis was at the school (1816-25). It was not until 1845, some 200 years after football was first played at Rugby School, that three pupils published the first written rules of the game.

For many years it had been the boys, and not the masters who had laid down the rules which were frequently modified by each new generation of students.

Guy’s Hospital Football Club, formed in London in 1843, by old boys from Rugby School, has robust claims to be the oldest football club in the world. It definitely predates by 14 years the creation of Sheffield FC, believed to be the oldest club playing association football.
