1 lb Sorrel 3 oz unsalted butter (or margarine) 1 large onion, chopped 2 tbsp flour (heaped) 2 1/2 l stock 2 tbsp breadcrumbs 1 pepper 2 egg yolks 150 ml cream

Wash the sorrel well and chop it up. Heat the butter or margarine in a saucepan and merely soften the sorrel and onion in it. Shake the flour on to the vegetables and blend well. Let it cook for about 1 minute. Meanwhile bring the stock to the boil, then add to the pan. Add the breadcrumbs, add pepper to taste, and bring to the boil, then simmer for around 1 hour covered. 1 cup navy beans, dried 2 1/2 lb beef, lean 1/2 lb slab bacon 10 cups cold water 1 bay leaf 8 whole peppercorns 2 cloves garlic 2 tblsp parsley, dried 1 carrot 1 celery stalk 1 red onion, big, chopped 1 tsp salt (optional) 8 beetroots for soup 2 beetroots, small 2 cups green cabbage, shredded 2 leeks, big, sliced 3 potatoes, cut into eighths 1 can (1 lb 13 oz) tomatoes 1 tbspn tomato paste 3 tbspn red wine vinegar 1 lb kielbasa (optional) 2 tbspn flour 1 tbspn butter, melted 1/2 cup sour cream (optional)

Cover beans with water and permit to soak overnight; cook until tender; drain; set aside. Place beef, bacon and water in large soup pot; bring to the boil. Skim fat from surface. Add bay leaf, peppercorns, garlic, parsley, carrot, celery, onion. Cover and simmer on a low heat for around 1 1/2 hours.

Scrub beetroots for soup and cook in boiling water until soft, around 45 minutes; drain and dispose of water; cool. Peel and cut each beetroot into eighths. Scrub small beetroots; grate; cover with water and soak.

Remove meat from soup; lay aside. Strain soup into another pot and add cooked beetroot, cabbage, leeks, potatoes, tomatoes, tomato paste, vinegar, sugar, beef and bacon.

Return to the boil and simmer for 45 minutes. Cut kielbasa into pieces and add with navy beans to soup. Simmer 20 minutes longer. Blend flour and butter together to make a paste. PREPARATION: Mix first 8 ingredients in a medium non-reactive bowl. Add swordfish pieces; toss to coat. Cover and leave stand at room temperature at least 1 hour. (Can be marinated for up to 3 hours.)

TO COOK: Heat oven to 200F. Heat oil in a frying pan or an electric deep fryer to 365F. Move swordfish from marinade to a strainer. Drain swordfish; discard marinade. Pat swordfish pieces dry with paper towels, then dredge in flour.

Working in batches to avoid overcrowding, fry swordfish until golden brown, 2 to 3 minutes. Drain swordfish pieces on paper towel; transfer to a heatproof dish but keep them warm in the oven until about to serve. (Can be kept warm in the oven up to 1/2 hour.)

Dengue Fever is also carried by certain mosquitoes. The symptoms of dengue vary but they almost always include a headache and a skin rash and occasionally joint pain. After that though, the parasites grow in number too rapidly for our defences and reach the organs that they want to inhabit.

When a non-infected mosquito sucks blood from an infected human, that mosquito can pass the parasites on to other non-infected humans. It is thought that most mosquito bites happen indoors when the person is asleep. Therefore, the WHO and other agencies have been handing out mosquito nets treated with insecticide in Africa, where most victims of mosquito borne infections live.

However, there is a concern that treating the problem in this way may make some kinds of mosquito immune to the insecticide or may even raise the likelihood of being bitten outdoors. There have been comparable worries in Cambodia. Until recently, it took three days of hospitalization to cure a patient of malaria, but in one region of Cambodia it now takes five days.

Doctors treating patients in that region say that this is a very worrying development. It is thought that if this local development spreads, then it could result in the deaths of millions of Africans again.

8] Age can be a cause but although there is nothing you can do about your age, you can attempt to be a ‘young’ whatever you are. individuals more than the age of 55 by and large start getting hypertension rather than younger individuals. 9] Race is another aspect about which you have no control, and Africans and their descendants are more liable to hypertension. If you fit this profile, become aware that you are in danger and check your BP regularly.

Mosquitoes, those tiny insects that make us uncomfortable, could also lay us open to malaria, dengue and chikungunya. They live in damp areas and reproduce in water.

The life cycle of this bug begins in holes filled with water, tide water pools in salt marshes, sewage effluent ponds, irrigated pastures and rain water ponds.

The four main types of mosquitoes, namely Aedes, Anopheles, Culex, and Culiseta, each have their own distinctive environmental requirements and this helps us to identify a particular species also.

It is best to note that all mosquitoes have four distinctive phases, namely the egg, larva, pupa and adult stages, in their life cycle. The eggs are laid on water or on damp surfaces and float on them. In addition, species like Culex and Culiseta lay eggs of 100 or more that are discovered stuck to each other in the fashion of a raft.

However, Anopheles mosquitoes lay their eggs on water and Aedes are known to lay their eggs usually on damp ground. The eggs take two days to hatch and metamorphose into the larval stage.

The mosquito larvae, known popularly as wrigglers or wigglers, live in water for a period of a week or two depending on the temperature of the water. The larvae swim frequently to the surface of the water to take in oxygen with the aid of siphon tunes.

However, species like the Anopheles have no such mechanism and generally breathe by lying flat on the water. It is interesting to note that mosquito larvae shed their skin four times and after the fourth stage they metamorphose into pupae.

Mosquito pupae, commonly called “tumblers”, live in water for from one to four days depending largely on the species and temperature. In this stage, known as the resting and non-eating stage in the life cycle, the insect can be seen lying on the surface of water.

In this phase it breathes through its two breathing tubes called trumpets. This is the vital and last stage before the mosquito changes into an adult and begins spreading infection. Once the development is over, the pupa opens and the adult comes out.

Once the adult mosquito is formed, it waits on the surface of the water for its skin to dry and harden. After a while, the mosquito is able to spread its wings and fly. It is interesting to remember that adult female mosquitoes are more aggressive than the males that feed just on the nectar of flowers.

Aedes female mosquitoes are known for their sore and enduring bites particularly during the daytime and they attack mostly humans. The Culex specie is similar to Aedes, However they are known to attack after dusk and have a preference for domestic and wild birds. They transmit encephalitis and sleeping sickness.

The Culiseta species of mosquito is a moderately aggressive biter that strikes during the evening hours and in the shade. Anopheles mosquitoes are known for spreading malaria in humans.

Ultimately, it is a good idea to know that most female mosquitoes have to feed on an animal before they can produce eggs, with some dying before laying viable eggs.

Furthermore,some species live near their breeding place while others fly as far as 100 miles from their breeding spot. Male mosquitoes have a shorter life span than female mosquitoes.

Malaria caused by mosquitoes could in severe cases show up as an enlarged spleen, chronic headache, clots of blood in the brain, inflamed liver, low blood sugar and hemoglobinuria which could lead to renal failure.

Other significant side effects caused by this mosquito bite disease could be dehydration, liver or kidney failure and breathing issues caused by fluid in the lungs.

Rupture of the spleen might lead to internal bleeding with the spread of infection leading to inflammation of the meninges, or membranes, that enclose the brain and spinal cord.

The control of malaria starts with the use of mosquito nets, the use of insect repellents and the spraying of insecticides in places where mosquitoes could breed easily.

We all realize that we ought to exercise. And the social life afterwards, and loads of people miss out on a social life especially after retirement or the death of a spouse.

Now golf may not seem to you to be an interesting sport and I understand that point of view completely, but that is because it is not until you realize how hard it is to hit that ball hundreds of yards onto the green that most people can understand the difficulty of playing the game well. That may be true of most sports, but golf does look so unhurried, does it not?

One of the good things about golf is that you can play with golfers of comparable ability to yourself so that you do not feel embarrassed or ‘out of place’.
